Traditional Mooncakes

Ingredients:
Mooncake dough
Lotus seed paste or red bean paste
Salted egg yolks (optional)
Golden syrup
Lye water
Vegetable oil
Flour for dusting

Instructions:
Prepare the Dough: Mix golden syrup, lye water, and vegetable oil in a bowl. Gradually add flour and knead to form a smooth dough. Cover and let it rest for 30 minutes.
Prepare the Filling: Divide the lotus seed paste or red bean paste into small portions. If using salted egg yolks, place one in the center of each portion.
Assemble the Mooncakes: Divide the dough into small balls. Flatten each ball and wrap it around the filling, sealing it completely. Press into a mooncake mold to shape.
Bake: Preheat the oven to 180ยฐC (350ยฐF). Place the mooncakes on a baking tray and bake for 10 minutes. Remove from the oven and let cool for 10 minutes. Brush with egg wash and bake for another 10-15 minutes until golden brown.
Cool and Serve: Allow the mooncakes to cool completely before serving. They can be stored in an airtight container for a few days to allow the flavors to develop.
