Marinated Pork Ribs with Fresh Herbs

Introduction:These marinated pork ribs are seasoned with fresh herbs and spices, creating a flavorful and tender dish perfect for grilling or roasting.
Ingredients:
2-3 pounds pork ribs
2 tablespoons olive oil
3 cloves garlic, minced
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1 tablespoon fresh sage, chopped
1 teaspoon smoked paprika
1 teaspoon ground black pepper
1 teaspoon salt
1/2 cup soy sauce
1/4 cup apple cider vinegar
1/4 cup honey
1 tablespoon Dijon mustard
1/2 teaspoon red pepper flakes (optional, for heat)
Fresh herbs (rosemary, thyme, sage) for garnish
Cherry tomatoes, for serving
Freshly ground black pepper, for serving
Instructions:
Prepare the Marinade:

In a large bowl, whisk together the olive oil, minced garlic, chopped rosemary, thyme, and sage, smoked paprika, ground black pepper, salt, soy sauce, apple cider vinegar, honey, Dijon mustard, and red pepper flakes (if using).
Marinate the Ribs:

Place the pork ribs in a large resealable plastic bag or a shallow dish. Pour the marinade over the ribs, ensuring they are well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to infuse.
Preheat the Grill or Oven:

If grilling, preheat the grill to medium-high heat. If roasting, preheat the oven to 350ยฐF (175ยฐC).
Cook the Ribs:
