Instructions:
Prepare the Beef:
Ensure the beef is very cold before you start. Finely chop the beef tenderloin with a sharp knife, or have it minced by a butcher. Place the chopped beef in a bowl.
Mix the Ingredients:
Add the finely chopped shallot, capers, Dijon mustard, Worcestershire sauce, hot sauce (if using), parsley, and chives to the bowl with the beef. Mix gently to combine all ingredients evenly.
Season the mixture with salt and black pepper to taste.
Shape and Serve:
Shape the seasoned beef mixture into a round or square patty and place it on a serving plate.
Make a small indentation in the center of the beef and carefully place the egg yolk in it.
